 Christmas Day in our household usually starts with a procession from oldest to youngest into the living room, where Dad turns the tree and some lights on so we can open our stockings.

After all the stockings are open, we have breakfast, which is typically a Strata, a recipe we got from one of James Barber's cookbooks.

Our strata is a little different from his, though you'll want to check on his cooking instructions.

Christmas Strata:
Grease a nine by thirteen glass pan that's at least three inches deep, with butter.
Put down a layer of bread (60% whole wheat works well, though white also works), ensuring that the pan is completely covered.
Lay down some grated cheese, some cooked, cubed ham, and some chopped broccoli (raw is fine, but not frozen. If you like your broccoli more tender, you can partially boil it first).
Then put down more grated cheese and the top layer of bread, similar to the first layer of bread.

Mix up some milk and beaten eggs, with salt and pepper to taste.
(the more pepper the better, usually)
Pour this mixture over the strata, then cover with aluminium foil.

If you want to make this up ahead of time, you can stick it in the fridge overnight, but I don't think it would keep very well for much longer than that.

Now, I don't remember the exact baking instructions, but I think you have to cook it at 350° for around thirty minutes.
(please don't use these instructions without checking them with one of James Barber's cookbooks first! As we only make this once a year, I have a hard time remembering the exact instructions)

After the first baking time, take the foil off and put some more grated cheese on top, and put it back in the oven for another ten to fifteen minutes.

Once it's done, you'll need to let it sit for about ten minutes to cool before cutting it up and dishing it out.
Then, enjoy!

Unfortunately, due to how large our turkey is this year (4.15 kg) we don't have enough oven for strata also, so we've been reduced to grilled ham and cheese sandwiches...

And now to bed, as it's already 1:30am and we get to wake our parents after 9am, so I don't have much time for sleep tonight.
